1 Medium Duda sweet onion
2 Granny Smith or any other firm apple
¼ cup chopped cilantro
¼ tsp salt
1/3 cup cider vinegar
¼ tsp black ground pepper
Juice of ½ lemon
1 tbsp crumbled feta cheese
1 tsp sugar

- Peel and cut Duda sweet onion in half, lengthwise and then into very thin slices. Place onions in a non corrosive bowl, sprinkle with sugar then add all the vinegar and set aside.
- Peel, core and quarter apples. Slice thin, then Julianne slices. Sprinkle with juice of lemon. Add apple Julianne to onions (do not drain vinegar), add chopped cilantro, feta cheese, salt and pepper.
- Serve cold as a salad or side dish.
