1 Duda Farms iceberg lettuce
1 Lb ground turkey meat
1 Pkg. taco mix
1 Small Duda Farm onion, chopped
2 Cloves of garlic, mashed
5 Corn tortillas
2 Tbsp oil
To Serve:
1 Cup sour cream
1 Cup chopped tomatoes
1 Cup chopped onions
1 Cup shredded cheddar cheese
½ Cup chopped cilantro
(Julienne Tortillas)
1 Cup chunky salsa

- Pre-heat oven to 350 degrees. Cut tortillas in half and Julienne each half crosswise. Spread in cookie sheet and bake until crisp. Set aside. In a skillet, heat oil, add chopped onions and garlic. Sauté until soft. Add turkey meat and cook until all pink color is gone. Add packet of Taco mix, $#189; cup of water and cook for 5 minutes, set aside.
- Remove core of lettuce head and carefully under water, separate the leaves-mostly larger leaves. With kitchen scissors, trim each lettuce leaf to form a large open cup-approximately 5" to 6" across.
To Serve:
- Place lettuce "cups" on a plate. Transfer cooked meat to a serving dish. Accompany meat with "crunchy" tortilla Julienne, sour cream, chopped tomatoes, chopped onions, shredded cheese, chopped cilantro and salsa.
- Each person should place 2 tbsp's or so of meat in a lettuce cup, top with a little of each of the accompaniments. Fold each side of lettuce cup over them and enjoy.
