4 fresh black or purple plums
1 cup orange juice
½ cup brown sugar, packed
2 teaspoons vanilla extract
1 tablespoon butter

  1. Cut plums in half and remove pit. Cut each half into thin wedges. Combine with orange juice and brown sugar in medium sauce pan.
  2. Bring to boil over MEDIUM heat, lower to simmer and cook for about 8-10 minutes until plums are very soft. Stir carefully.
  3. Remove from heat, cool to warm, then add vanilla and butter. Stir well and serve warm over waffles, pancakes or ice cream.
